This vegan French toast is the perfect breakfast dish

Preparing an upscale vegetarian brunch that is sure to impress even the most picky guests is easier than you think! In this episode of In The Know: Kitchen Etc, vegan cookbook author Carleigh Bodrug (plantyou) shows how to make the simplest and most delicious vegan toast and top it with vibrant homemade chia jam! While this sweet and savory recipe may sound great, it can be made with just a few simple ingredients!



  1. Add the strawberries to a saucepan and heat, stirring occasionally, for a few minutes until they begin to soften.

  2. Add maple syrup and keep stirring. Next, use a potato masher to crush the berries into a jam-like consistency.

  3. Turn off the heat and add the chia seeds and toss with the berries until well combined.

  4. Pour the strawberry jam into a bowl and set it aside for at least 5 minutes until it thickens, or put it in the fridge overnight.

  5. While the jam hardens, melt the vegetable butter in a skillet over medium heat.

  6. Add the white bread to the pan and burn it on one side.

  7. Add the plant-based milk (Carleigh uses almond milk) to the skillet along with the cinnamon. Allow the bread to absorb some of the milk, then flip it over and let it burn on the other side.

  8. Continue to cook the bread until both sides turn brown and the milk is completely absorbed. If all the milk is absorbed but the bread is not golden yet, feel free to add a little more milk while cooking.

  9. Add French toast to a plate and add strawberry and chia jam. Then add a little maple syrup and cinnamon and dig in!
