For Remy Park, the journey toward a vegan lifestyle—and her well-followed blog, Veggiekins—was an authentic one. After suffering from stomach issues in college, Park became dairy-free and began experimenting with recipes that suited her new needs. She quickly went dairy-free and vegan, a term Park didn’t fully understand at the time — but what she did I know if you feel better. She soon learned that the planet was better for her, too.
Park told Brightley on a recent episode of good together. “The longer you are vegan, the more you fully understand what that means. It cures a lot of things.”
Park’s presence on social media began as an exercise in overcoming an eating disorder – a way to cement her relationship with food. When her friends found out about the account, she chose to improve her food rather than hide it and learn his style (and play with it).
“I had no interest in food before — I was, in fact, very afraid of food. That was a great starting point for me,” says Park. “And then it became something I was really excited about.”
Eight years later, Park makes a living creating and sharing vegan recipes. Its main goal? To help followers (vegetarians and non-vegetarians alike!) realize that a vegan diet doesn’t have to be restrictive – it can really be fun.
Get creative in the kitchen
The most popular vegan park recipes are the ones that don’t It seems Vegetarian at first. “Noodles, stir-fries — like a Thai dish, for example, or like a peanut/cucumber noodle dish, things like that,” she says, adding that dishes without ingredients like tofu or nutritional yeast tend to be Good entry point for people. “It just feels natural,” Park says. “And when you think about it, peanut butter and jam sandwiches are vegan. It’s funny when people tell me I’ve never eaten vegan before.”
Park likes to incorporate Eastern ideals of what your plate can look like, as Western associations with vegetarianism tend to be understated and stifling. Rather than focusing your thoughts about food on what you can’t eat, Park recommends using boundaries as an opportunity to think outside the box.
“It’s a lot more fun to do an experiment or some kind of test with your family to see, ‘How can we make this vegan?'” or “What kind of versions can we make?” “I think that pushes you to be more creative about what you can eat.”
Keep your vegan lifestyle real
While Park certainly believes in the benefits – both health and environmental – of vegans, she doesn’t view the dietary transition as an essential aspect of being good ground.
“There are a lot of ways you can improve our planet,” Park says. “There are many reasons why someone may not be able to be a vegetarian successfully, including health medications, access.”
Park notes that while there is always room for improvement, she sees the brands she works with striving to make their models more earth-friendly. “Renewable agriculture, for example, offers more than it takes – and that is something I see really exciting as a trend,” she says citing sustainably packaged plant products as another area where growth is possible.
But what is the best way to approach a vegan lifestyle? realistically. “Like many lifestyle changes, I realized it’s not sustainable when it’s really extreme,” Park says, adding that the same goes for adopting more environmental habits. “The best way is to be kind to yourself and realistic about what can be done for you,” she says. “Make it something not stressful, but more fun.”
