Tandoora, also known as geluda or ivy gourd, is a slender, pale green gourd that makes it one of my childhood favorites. Tindorā by Sheil Shukla is cooked until soft but retains some bite; It is then fried with a classic blend of spices. Tandoora can be found in Indian grocery stores (fresh tandoora cooks better than frozen), but if it is not available, fresh green beans (half lengthwise) can be substituted. Top these bad boys with some vegan vanilla ice cream or coconut whipped cream. Instead of a berry mixture, it will also go well with frozen blueberries, raspberries, rhubarb, or any other fruit.

Despite their small size, chia seeds are a nutritional powerhouse: they’re packed with omega-3 fatty acids, antioxidants, calcium, fiber, and protein. Then I decided to make something that somehow left my attention. With all the veggie burgers I’ve made–and I’ve made many–I’ve never made a tofu burger. My God! The double black bean cheeseburger from Rhea Parsons was very good. They tasted more like meat burgers than bean burgers. The texture was crunchy on the outside because I really let them build up a crust while they were cooking but they were soft on the inside and very tasty.
