Delicious Scarbarello Chicken Recipe

the total: 60 minutes
- 2 1/2 pounds bone-in chicken thighs
- 1/2 teaspoon kosher salt
- 1/4 freshly ground black pepper
- 1 tablespoon extra virgin olive oil
- Up to 4 rings of sweet or hot Italian sausage (hot or sweet and cut into rings or diagonally through the center)
- 1 medium onion, sweet
- 1 large red pepper
- 2 tablespoons finely chopped sage leaves
- 2 tablespoons of fresh garlic
- 8 pickled cherry peppers
- 1/4 cup of pickling liquid from the jar
- 1 cup white wine (preferably dry)
- 2 tablespoons of sugar
- 1 cup broth or chicken broth (low sodium)
Depending on your preference, you can also add:
- 1/4 cup flat-leaf Italian parsley
- 1 sprig of fresh rosemary
- 1 sprig of fresh oregano
- ½ cup of red wine vinegar, but then put ½ cup of white wine instead of a full glass
1: First, preheat the oven. It’s best to do this before you start grilling the chicken.
2: Salt and pepper the chicken on all sides.
3: Heat a large skillet over medium heat with extra virgin olive oil. After the oil is hot enough, put the chicken thighs in it and fry until brown and crispy on both sides. Take it off the fire and let it rest.
* It is very important that the heat is moderate and not stir the chicken too much; Otherwise you will tear the flesh.
4: Add sausage and fry for a few minutes. Take it off the fire and let it rest.
5: In the same skillet, add the onion and bell pepper and cook over a moderate heat until it turns golden brown. The process usually takes less than 5 minutes. Don’t take it out of the pan, just add the sage and garlic and cook until soft and fragrant.
*Depending on your preference, you can also add parsley, oregano, and rosemary.
6: When the spices soften and give off an incredible aroma, add the pickled cherry peppers as well as the liquid they were kept in. Stir them for a few moments, making sure to scrape off the pieces sticking to the bowl.
7: Add wine, as we have already mentioned in the list of ingredients, add either a full glass of dry white wine, or half a glass of white + half a glass of red wine.
8: Cook for a few minutes, or in other words, until the amount of liquid is reduced by about half.
9: Place the sausage back into this tasty chicken Scarpariello, then the meat, making sure skin-side up.
10: After mixing all the ingredients, transfer to the oven and bake until the chicken is crispy and soft. After about 30 minutes, the dish is ready to serve!
